Ingredients

2 medium apples (Granny Smith or Honeycrisp), peeled, cored, and diced

1 cup all-purpose flour

1 teaspoon baking powder

½ teaspoon baking soda

½ teaspoon cinnamon

¼ teaspoon nutmeg

¼ teaspoon salt

1 large egg

¾ cup milk

2 tablespoons granulated sugar

1 teaspoon vanilla extract

Oil for frying (such as vegetable or canola)

Powdered sugar for dusting

Optional: a pinch of nutmeg for topping

Instructions

Prepare the Apples: In a medium bowl, combine the diced apples with 1 tablespoon of granulated sugar and a sprinkle of cinnamon. Let them sit for about 10 minutes to macerate.

Make Batter: In another large bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt. In a separate bowl, beat the egg, then add the milk, remaining sugar, and vanilla extract. Mix well and pour the wet ingredients into the dry ingredients, stirring until just combined.

Incorporate Apples: Gently fold the macerated apples into the batter, ensuring they are evenly distributed but being careful not to over-mix.

Heat the Oil: In a deep frying pan or pot, heat about 2 inches of oil over medium heat until it reaches 350°F (175°C). You can test it by dropping in a small spoonful of batter; if it sizzles and bubbles, the oil is ready.

Fry the Bites: Using a small cookie scoop or spoon, drop small amounts of batter into the hot oil, being careful not to overcrowd the pan. Fry the fritter bites for about 2-3 minutes on each side, or until golden brown. Use a slotted spoon to carefully remove them from the oil and place them on a paper towel-lined plate to drain excess grease.

Dust and Serve: Once all the fritter bites are fried, sprinkle them generously with powdered sugar. For an extra touch, you can mix some powdered sugar with a pinch of nutmeg and dust that over the top for added flavor.

Enjoy: Serve warm, either plain or with a side of caramel sauce for dipping. Enjoy your delightful Apple Fritter Bites!
