2 cups rolled oats

2 cups unsweetened almond milk (or any milk of your choice)

2 medium apples, peeled, cored, and diced (preferably Granny Smith or Honeycrisp)

1/2 cup brown sugar or coconut sugar

1/4 cup maple syrup

1/2 cup chopped walnuts or pecans (optional)

1 tsp cinnamon

1/2 tsp nutmeg

1 tsp vanilla extract

1/2 tsp salt

2 tsp baking powder

2 eggs (or flax eggs for a vegan option)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a 9x9-inch baking dish with cooking spray or butter.

    Mix Dry Ingredients: In a large bowl, combine the rolled oats, brown sugar, cinnamon, nutmeg, salt, and baking powder. Mix thoroughly.

      Prepare Wet Ingredients: In another bowl, whisk together the almond milk, maple syrup, vanilla extract, and eggs (or prepared flax eggs).

        Combine Ingredients: Pour the wet mixture into the bowl with the dry ingredients. Stir until just combined. Gently fold in the diced apples and nuts, if using.

          Transfer to Baking Dish: Transfer the mixture into the prepared baking dish, spreading it out evenly.

            Bake: Bake in the preheated oven for 35-40 minutes, or until the center is set and the top is lightly golden brown.

              Cool and Serve: Allow to cool for about 10 minutes. Cut into squares and serve warm, topped with a drizzle of maple syrup or a dollop of yogurt if desired.
