Ingredients

1 loaf of day-old brioche or challah bread, cut into 1-inch cubes

3 large eggs

1 cup whole milk

1 cup heavy cream

1 cup brown sugar, packed

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/4 teaspoon nutmeg

1/4 teaspoon salt

2 medium apples (Granny Smith or Honeycrisp), peeled and diced

1/2 cup chopped pecans or walnuts (optional)

2 tablespoons unsalted butter, cut into small pieces

Maple syrup, for serving

Instructions

Preheat the Oven:

Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish with cooking spray or butter.

      Prepare the Bread:

In a large mixing bowl, combine the cubed brioche or challah bread with the diced apples and nuts (if using). Toss gently to mix.

          Make the Custard:

In another bowl, whisk together the eggs, whole milk, heavy cream, brown sugar, vanilla extract, cinnamon, nutmeg, and salt until well combined.

              Combine:

Pour the custard mixture over the bread and apple mixture, gently folding everything together until the bread is well soaked in the custard. Ensure that no dry bread remains.

                  Transfer to Baking Dish:

Transfer the mixture to the greased baking dish, spreading it out evenly. Dot the top with small pieces of butter.

                      Bake:

Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes. After 30 minutes, remove the foil and bake for an additional 15-20 minutes, or until the top is golden brown and the custard is set.

                          Serve:

Allow the French toast bake to cool for about 5-10 minutes before serving. Drizzle with maple syrup for added sweetness. Enjoy warm!
