Apple Cheddar Quesadilla

4 large flour tortillas

2 cups shredded sharp cheddar cheese

2 medium apples (such as Honeycrisp or Granny Smith), cored and thinly sliced

2 tablespoons unsalted butter

1 teaspoon ground cinnamon

2 tablespoons honey (optional)

Pinch of salt

Fresh thyme leaves for garnish (optional)

Prepare the Apples: In a medium bowl, toss the sliced apples with the ground cinnamon, a pinch of salt, and honey if using. Set aside to marinate for about 5-10 minutes.

    Assemble the Quesadilla: On a clean surface, place one tortilla down. Sprinkle about ½ cup of shredded cheddar evenly over the tortilla. Layer half of the cinnamon apples on top of the cheese. Add another ½ cup of shredded cheddar over the apples for extra cheesiness, then top with another tortilla.

      Cook the Quesadilla: In a large skillet over medium heat, melt 1 tablespoon of butter. Once the butter is melted and sizzling, carefully place the assembled quesadilla in the skillet. Cook for about 3-4 minutes or until the bottom tortilla is golden brown and the cheese starts to melt.

        Flip the Quesadilla: Using a large spatula, gently flip the quesadilla over. Add the remaining tablespoon of butter to the pan. Cook for another 3-4 minutes until the second side is golden brown and the cheese is fully melted.

          Slice and Serve: Remove the quesadilla from the skillet and allow it to cool for a minute before slicing it into wedges. Garnish with fresh thyme leaves if desired. Serve warm with a side of salsa or guacamole if you like!
