12 oz cheese tortellini

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 cup black olives, pitted and sliced

1/2 cup green olives, pitted and sliced

1/2 cup salami, diced

1/2 cup pepperoni, diced

1/3 cup roasted red peppers, chopped

1/2 cup mozzarella balls, halved

1/4 cup red onion, thinly sliced

1/4 cup fresh basil leaves, torn

1/2 cup Italian dressing (homemade or store-bought)

Salt and pepper to taste

Crushed red pepper flakes (optional, for a kick)

Instructions
 

Cook the Tortellini: In a large pot of salted boiling water, cook the cheese tortellini according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside to cool.

    Prepare the Veggies: While the tortellini is cooking, wash and chop the cherry tomatoes, cucumber, olives, roasted red peppers, and red onion as specified. Place them in a large mixing bowl.

      Add Meats and Cheese: To the bowl with the vegetables, add the diced salami, diced pepperoni, and mozzarella balls. Gently toss to combine.

        Combine: Once the tortellini has cooled, add it to the large bowl with the other ingredients.
