Ingredients

For the Coconut Base:

2 cups unsweetened shredded coconut

1/2 cup sweetened condensed milk

1/4 cup almond butter

1 tsp vanilla extract

Pinch of salt

For the Topping:

24 whole almonds (or as desired)

1 cup dark chocolate chips (or milk chocolate if preferred)

1 tsp coconut oil (optional, for smoother chocolate)

Instructions

Prepare the Coconut Base:

    - In a large mixing bowl, combine the unsweetened shredded coconut, sweetened condensed milk, almond butter, vanilla extract, and a pinch of salt. Mix well until the ingredients are thoroughly combined and the coconut is well moistened.

      Shape the Mixture:

        - Using your hands, shape the coconut mixture into small bite-sized balls or rectangular bars, about 1-inch in size. (You can wet your hands slightly to help prevent sticking.)

          - Place each formed bite on a parchment-lined baking sheet.

            Chill the Bites:

              - Once you've shaped all the bites, transfer the baking sheet to the refrigerator and chill for at least 30 minutes to firm up.

                Prepare the Topping:

                  - After chilling, preheat your oven to 350°F (175°C) if you want to toast the almonds for extra flavor. Spread the whole almonds on a baking sheet and toast for about 5-7 minutes until golden and fragrant. Allow cooling.

                    Melt the Chocolate:

                      - In a microwave-safe bowl or using a double boiler, melt the dark chocolate chips. If using coconut oil, add it to the chocolate to create a silky texture. Heat in 30-second intervals, stirring until completely melted and smooth.

                        Assemble the Bites:

                          - Remove the coconut bites from the refrigerator. Dip each bite into the melted chocolate, ensuring it is fully coated. Use a fork to lift them out, allowing any excess chocolate to drip off. Place them back on the parchment-lined baking sheet.

                            Top with Almonds:

                              - While the chocolate is still wet, press a toasted almond on top of each coconut bite.

                                Set the Chocolate:

                                  - Once all bites are coated and topped, return the baking sheet to the refrigerator for about 30 minutes, or until the chocolate is fully set.

                                    Serve and Enjoy:

                                      - Once set, remove the almond joy coconut bites from the parchment and serve them. Store any leftovers in an airtight container in the refrigerator for up to a week.
