Ingredients

1 ¾ cups sweetened shredded coconut

1 cup sweetened condensed milk

½ teaspoon vanilla extract

¼ teaspoon salt

1 cup almond butter (or peanut butter)

½ cup whole almonds (for topping)

1 ½ cups milk chocolate chips

1 tablespoon coconut oil

Instructions

Prepare the Base:

In a large mixing bowl, combine sweetened shredded coconut, sweetened condensed milk, vanilla extract, and salt. Mix until well combined and the coconut is fully coated.

      Form the Coconut Layer:

Line an 8x8 inch baking dish with parchment paper, leaving some overhang for easy removal later. Press the coconut mixture firmly into the bottom of the dish, creating an even layer. Make sure it's tightly packed to hold together after refrigeration.

          Add Almond Butter Layer:

Melt the almond butter in a microwave-safe bowl (about 30-40 seconds) until smooth and pourable. Spread the almond butter evenly over the coconut layer. Use a spatula to ensure an even layer.

              Chill:

Place the baking dish in the refrigerator for at least 30 minutes to allow the layers to set.

                  Prepare the Chocolate Coating:

In a microwave-safe bowl, combine the milk chocolate chips and coconut oil. Melt in the microwave in 30-second increments, stirring in between until smooth.

                      Coat the Bars:

Once the coconut mixture is fully set, remove it from the refrigerator. Using the parchment overhang, lift the whole bar out of the dish. Cut into small squares or bars (about 16 pieces).

                          Dip in Chocolate:

Dip each bar into the melted chocolate, ensuring all sides are coated. Place the dipped bars on a parchment-lined baking sheet. Top each bar with a whole almond for garnish.

                              Final Chill:

Return the coated bars to the refrigerator for another 30 minutes so the chocolate can set.

                                  Serve and Enjoy:

Once set, serve the Almond Joy Coconut Bars chilled or at room temperature. Store any leftovers in an airtight container in the fridge.
