2 medium zucchini

1/2 cup all-purpose flour

2 large eggs

1 cup breadcrumbs (preferably panko for extra crunch)

1/4 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon Italian seasoning

1/2 teaspoon paprika

Salt and pepper to taste

Prepare the Zucchini: Start by washing and drying the zucchini. Cut each zucchini into quarter-inch thick strips, resembling fries. Place them onto a clean kitchen towel and sprinkle with salt to draw out moisture. Let them sit for about 15-20 minutes, then pat dry.

    Set Up Breading Stations: In three separate bowls, prepare your breading stations:

      - Flour Station: Place the all-purpose flour in the first bowl.

        - Egg Wash Station: Crack the eggs into the second bowl and beat them lightly.

          - Breadcrumb Mixture Station: In the third bowl, combine panko breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, Italian seasoning, paprika, salt, and pepper.

            Coat the Zucchini: Dip each zucchini strip first into the flour, ensuring it's fully coated. Shake off any excess flour before dipping it into the egg wash, making sure it's covered.
