1 cup raw sunflower seeds, soaked in water for 4 hours

1 cup grated zucchini (about 1 medium zucchini)

1 cup grated carrots (about 2 medium carrots)

1/2 cup finely chopped onion

2 cloves garlic, minced

1/2 cup chickpea flour (besan)

1/4 cup fresh parsley, chopped

1 teaspoon ground cumin

1 teaspoon paprika

Salt and pepper to taste

1 tablespoon olive oil (for drizzling)

Prepare Sunflower Seeds: Drain the soaked sunflower seeds and rinse them under cold water. Pat them dry with a towel.

    Mix Veggies: In a large mixing bowl, combine the grated zucchini, grated carrots, chopped onion, and minced garlic. Mix well.

      Blend the Base: In a food processor, add the drained sunflower seeds and pulse until coarsely ground but not fully powdered—aim for a chunky texture. Add the ground seeds to the veggie mixture.
