Air-Fryer Eggplant Parmesan Discs

1 medium eggplant, sliced into 1/2-inch discs

1 cup breadcrumbs (preferably panko for extra crunch)

1/2 cup grated Parmesan cheese

1 teaspoon dried oregano

1 teaspoon garlic powder

1/2 teaspoon salt

1/4 teaspoon black pepper

2 large eggs

1 cup marinara sauce (for dipping)

1 cup shredded mozzarella cheese

Fresh basil leaves (for garnish, optional)

Cooking spray or olive oil spray

Instructions
 

Prepare the Eggplant: Sprinkle salt on the eggplant slices and let them sit for about 30 minutes. This helps to draw out excess moisture and bitterness. After 30 minutes, rinse the slices under cold water and pat them dry with paper towels.

    Set Up Breading Station: In a shallow bowl, whisk together the eggs. In another bowl, combine the breadcrumbs, Parmesan cheese, dried oregano, garlic powder, salt, and black pepper.

      Bread the Eggplant: Dip each eggplant disc into the egg mixture, ensuring it's fully coated, then transfer it to the breadcrumb mixture, pressing lightly to adhere the crumbs. Repeat until all the slices are breaded.

        Preheat the Air Fryer: Preheat your air fryer to 375°F (190°C) for about 5 minutes.

          Arrange the Discs: Spray the air fryer basket with cooking spray. Place the breaded eggplant discs in a single layer in the basket (you may need to cook them in batches). Lightly spray the tops of the eggplant discs with olive oil spray.

            Air Fry: Cook the eggplant discs at 375°F (190°C) for 10-12 minutes or until they are golden brown and crispy. Flip them halfway through cooking for even crispness.

              Add Marinara and Cheese: Once cooked, remove the eggplant from the air fryer. Spoon a little marinara sauce over each disc and sprinkle with mozzarella cheese. Return to the air fryer and cook for an additional 3-5 minutes or until the cheese is melted and bubbly.

                Serve: Remove from the air fryer, garnish with fresh basil leaves if desired, and serve with extra marinara sauce for dipping.
