Ingredients
  

4 cod fillets (6 oz each)

1 cup panko breadcrumbs

1/2 cup grated Parmesan cheese

2 tbsp fresh parsley, chopped

2 tbsp fresh dill, chopped

1 tsp garlic powder

1 tsp onion powder

1/2 tsp paprika

1/2 tsp salt

1/4 tsp black pepper

2 large eggs, beaten

Prepare the Coating: In a large mixing bowl, combine panko breadcrumbs, grated Parmesan cheese, chopped parsley, chopped dill, garlic powder, onion powder, paprika, salt, and black pepper. Mix thoroughly until all ingredients are well combined.

    Prepare the Cod: Pat the cod fillets dry with paper towels to remove excess moisture. This will help the coating adhere better and achieve maximum crispiness.

      Dredge the Fish: In a shallow dish, place the beaten eggs. Dip each cod fillet into the egg, making sure it is fully coated, then transfer it to the breadcrumb mixture. Press the coating onto the fillet to ensure an even layer adheres. Repeat for all fillets.

        Preheat the Air Fryer: Preheat your air fryer to 400°F (200°C) for about 5 minutes to ensure the cod cooks evenly.

          Cook the Cod: Lightly spray the air fryer basket with olive oil. Place the coated cod fillets in the basket in a single layer, making sure they do not touch each other. Spray the tops of the fillets with a light mist of olive oil.

            Air Fry: Cook the cod at 400°F (200°C) for 10-12 minutes, flipping halfway through, until the crust is golden brown and the fish is cooked through (internal temperature should reach 145°F or 63°C).
