Ingredients

1 medium head of green cabbage (about 2 pounds), thinly sliced

2 large yellow onions, thinly sliced

3 tablespoons olive oil or butter (or a combination)

2 tablespoons brown sugar

1 teaspoon kosher salt

1/2 teaspoon black pepper

1 tablespoon apple cider vinegar

1 teaspoon caraway seeds (optional)

Fresh parsley, chopped for garnish

Instructions

Prep the Vegetables: Start by removing the outer leaves of the cabbage, then rinse and slice it into thin strips. Peel and thinly slice the onions as well. Having them uniformly cut will help them cook evenly.

Heat Oil or Butter: In a large skillet over medium heat, add olive oil or butter. Allow it to melt and coat the bottom of the skillet.

Add Onions: Once the oil or butter is hot, add the sliced onions. Sauté for about 8-10 minutes, stirring occasionally, until they start to soften and become translucent.

Add Cabbage and Seasonings: Gradually add the sliced cabbage to the skillet along with the brown sugar, salt, and black pepper. If using, stir in the caraway seeds for an extra layer of flavor.

Continue to Cook: Increase the heat to medium-high and cook for another 15-20 minutes, stirring occasionally. The cabbage should become tender and develop a beautiful caramelized color.

Deglaze the Pan: Once the cabbage is nicely caramelized, reduce the heat to medium-low. Add the apple cider vinegar to the skillet, scraping up any brown bits from the bottom of the pan. This adds depth to the flavors.

Final Touches: Cook for an additional 5 minutes until the vinegar has mostly evaporated and the cabbage is succulent and well-coated in the caramelized mixture. Taste and adjust seasoning if necessary.

Serve: Remove from heat and garnish with fresh chopped parsley for a pop of color and freshness. Serve warm as a delightful side dish to complement your favorite main course.
