Ingredients

1 lb (450g) boneless, skinless chicken breasts, thinly sliced

2 tablespoons vegetable oil

2 cups mixed bell peppers (red, yellow, green), sliced

1 cup snap peas, trimmed

1 cup broccoli florets

3 cloves garlic, minced

1 tablespoon fresh ginger, minced

½ cup teriyaki sauce (store-bought or homemade)

1 tablespoon sesame oil

1 tablespoon cornstarch mixed with 2 tablespoons water (optional, for thickening)

2 green onions, chopped for garnish

Sesame seeds for garnish

Cooked rice or noodles, for serving

Instructions

Prepare the Ingredients: Slice the chicken breast and vegetables. Mince the garlic and ginger. If you are making your own teriyaki sauce, prepare it beforehand.

Cook the Chicken: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the sliced chicken and stir-fry for about 5-7 minutes until the chicken is fully cooked and no longer pink. Remove the chicken from the skillet and set aside.

Sauté Vegetables: In the same skillet, add the remaining tablespoon of vegetable oil. Add the minced garlic and ginger, cooking for about 30 seconds until fragrant. Then, add the sliced bell peppers, snap peas, and broccoli florets. Stir-fry the vegetables for about 4-5 minutes until they are vibrant and tender-crisp.

Combine with Sauce: Return the cooked chicken to the skillet. Pour the teriyaki sauce over the chicken and vegetables, stirring well to coat everything in the sauce. If you prefer a thicker sauce, add the cornstarch mixture and stir until the sauce thickens and becomes glossy, about 1-2 minutes.

Finish and Serve: Drizzle the sesame oil over the stir-fry and give it one last stir. Remove from heat and garnish with chopped green onions and sesame seeds.

Serve Hot: Serve the teriyaki chicken stir-fry over a bed of cooked rice or noodles, and enjoy!
