1 lb (450g) large shrimp, peeled and deveined

2 tbsp olive oil

1 tsp ground cumin

1 tsp smoked paprika

1/2 tsp cayenne pepper (adjust to taste)

Salt and pepper, to taste

Juice of 1 lime

For the Cabbage Slaw:

2 cups green cabbage, finely shredded

1 cup red cabbage, finely shredded

1/2 cup carrots, grated

1/4 cup cilantro, chopped

2 tbsp apple cider vinegar

1 tbsp honey (or agave for vegan option)

Salt and pepper, to taste

For Serving:

8 small corn or flour tortillas

Lime wedges

Extra cilantro leaves, for garnish

Sliced avocado (optional)

Hot sauce (optional)

Instructions
 

Prepare the Cabbage Slaw:

    - In a large bowl, combine the green cabbage, red cabbage, grated carrots, and chopped cilantro.

      - In a small bowl, whisk together the apple cider vinegar, honey, salt, and pepper. Pour the dressing over the cabbage mixture and toss until well coated. Set aside to let the flavors meld.

        Cook the Shrimp:

          - In a mixing bowl, toss the shrimp with olive oil, cumin, smoked paprika, cayenne pepper, lime juice, salt, and pepper until evenly coated.

            - Heat a large skillet over medium-high heat. Once hot, add the shrimp in a single layer. Cook for about 2-3 minutes per side, or until the shrimp turn pink and opaque. Remove from heat.

              Warm the Tortillas:
