30-Minute Creamy Spinach and Mushroom Pasta

8 oz (225g) fettuccine or spaghetti

2 tablespoons olive oil

1 medium onion, chopped

3 cloves garlic, minced

8 oz (225g) cremini or button mushrooms, sliced

4 cups fresh spinach, washed and roughly chopped

1 cup heavy cream

1 cup grated Parmesan cheese, plus extra for serving

1 teaspoon dried Italian herbs (or 1 tablespoon fresh basil)

Salt and pepper to taste

Optional: Red pepper flakes for a kick

Fresh parsley for garnish

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the fettuccine or spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

    Sauté Onions and Garlic: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for 2-3 minutes until it becomes translucent. Add the minced garlic and sauté for another 1 minute until fragrant.

      Add Mushrooms: Stir in the sliced mushrooms and cook for about 5-7 minutes, or until they are tender and slightly browned.

        Wilt the Spinach: Add the chopped spinach to the skillet and cook, stirring frequently, until wilted, about 2-3 minutes.

          Create the Cream Sauce: Pour in the heavy cream, and stir well to combine. Allow it to simmer for 2 minutes, then mix in the grated Parmesan cheese. Stir until the cheese is melted and the sauce becomes creamy.

            Combine Pasta and Sauce: Add the drained pasta to the skillet, tossing everything together to coat the pasta evenly with the creamy sauce. If the sauce is too thick, add reserved pasta water a little at a time to reach desired consistency.

              Season: Sprinkle in the dried Italian herbs, and season with salt and pepper to taste. For some heat, add a pinch of red pepper flakes if desired.

                Serve: Remove from heat and plate the pasta. Garnish with fresh parsley and extra Parmesan cheese. Serve hot and enjoy!
