Ingredients

1 lb (450g) large shrimp, peeled and deveined

1 cup jasmine rice

2 cups low-sodium chicken broth

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon red pepper flakes (adjust to taste)

1 tablespoon fresh lemon juice

2 tablespoons fresh parsley, chopped

Salt and pepper to taste

Lemon wedges (for garnish)

Instructions

Prepare the Rice: In a medium saucepan, bring the chicken broth to a boil. Add the jasmine rice, a pinch of salt, and reduce to a simmer. Cover and cook for about 10-12 minutes, or until the rice is tender and has absorbed the broth. Remove from heat and let it sit covered.

Cook the Shrimp: While the rice is cooking, heat a large skillet over medium-high heat. Add the butter and allow it to melt, swirling it around the pan to coat evenly.

Add Aromatics: Once the butter is melted, add the minced garlic and red pepper flakes. Sauté for about 30 seconds until fragrant, being careful not to burn the garlic.

Sauté the Shrimp: Add the shrimp to the skillet, season with salt and pepper, and cook for 2-3 minutes on each side until they turn pink and opaque. Stir in the lemon juice to enhance the flavors.

Combine and Serve: Fluff the cooked rice with a fork and divide it among plates. Top with the garlic butter shrimp and sprinkle with fresh parsley. Serve immediately with lemon wedges on the side.
