Instructions

Cook the Chicken:

    - In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced chicken and cook until browned on all sides, about 5-7 minutes. Remove chicken from the pot and set aside.

      Sauté the Vegetables:

        - In the same pot, add the onion, garlic, carrots, and celery. Sauté for about 5 minutes until the vegetables are softened.

          Add the Seasonings:

            - Stir in the thyme, rosemary, salt, and pepper. Add the cooked chicken back into the pot.

              Make the Creamy Base:

                - Pour in the chicken broth and bring to a simmer. Reduce the heat to low, then add the heavy cream. Stir to combine. If you prefer a thicker sauce, mix cornstarch with a little water to make a slurry, then slowly add it to the pot, stirring constantly.

                  Prepare the Dumplings:

                    - In a large bowl, combine the flour, baking powder, and salt. Cut in the chilled butter until the mixture resembles coarse crumbs. Stir in the milk until just combined. Avoid overmixing to keep the dumplings fluffy.

                      Cook the Dumplings:

                        - Once the creamy chicken base is simmering, drop spoonfuls of the dumpling mixture directly onto the surface of the sauce. Cover the pot with a lid and cook for about 15-20 minutes, or until the dumplings are fluffy and cooked through.

                          Serve:

                            - Gently check a dumpling to ensure it’s cooked; it should be light and fluffy. Garnish the chicken and dumplings with fresh parsley before serving for a burst of color and flavor.

                              Enjoy!

                                - Ladle the creamy chicken and dumplings into bowls and serve hot.
