12 oz cheese tortellini (fresh or frozen)

2 tablespoons olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

8 oz cremini mushrooms, sliced

4 oz baby spinach

1 cup heavy cream

1 cup vegetable broth

1 teaspoon dried thyme

1 teaspoon Italian seasoning

Salt and pepper to taste

½ cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Cook the Tortellini: In a large pot of salted boiling water, cook the tortellini according to package instructions until al dente. Drain and set aside.

    Sauté the Vegetables: In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until translucent. Add the minced garlic and sliced mushrooms, cooking for another 5-7 minutes until the mushrooms are browned and tender.

      Add Spinach and Seasonings: Stir in the baby spinach, allowing it to wilt for about 2 minutes. Then, add the dried thyme, Italian seasoning, salt, and pepper.

        Make the Cream Sauce: Pour in the heavy cream and vegetable broth, stirring to combine. Bring the mixture to a gentle simmer and let it cook for about 5-7 minutes, allowing the flavors to meld and the sauce to thicken slightly.

          Combine Tortellini and Sauce: Reduce the heat to low, and add the cooked tortellini to the sauce. Stir well to coat all the pasta in the creamy mixture. Finally, mix in the grated Parmesan cheese until melted and the sauce is creamy.
